Foodie Pen Pal Reveal Day!

Hi!
Can you believe it's the last day of July already? I don't want summer to be half over yet!!

That being said, the end of the month means foodie pen pal reveal day and I'm super excited for my first one!

This month my pen pal was the lovely Vesna, who blogs over at Lipstick and Lemondrops. What an awesome  pen pal! Her emails were so sweet, and we discovered that we have quite a few things in common- we both work with kids, love mexican foods and avocados, and we both really want to travel to Ireland! Vesna had an awesome questionnaire that she sent me in her first email that allowed us to figure that all out.

I was so excited to receive my package in the mail, it was almost like Christmas!



Inside everything was wrapped in pretty paper and she included a sweet card explaining the contents of my package.
My first item was a package of Mexican spices. I'd never used a pre mixed spice like this so I was really excited to try it. I used it on some chicken and created a taco salad and holy smokes, it was unreal!
 

The second item was some organic salsa. It was the perfect amount of spicyness! I'd seen this brand before but never tried it and it's now going to be a staple for us!
The way to my heart? Definitely with chocolate! I don't know how Vesna knew it, but I currently have an obsession with salted chocolate. This was my favorite part of the package, and I am going to be on the lookout to see if I can find this same bar here in BC. I have been trying to eat it slowly, just a few squares a day to make it last, but I don't know how much longer I can hold out!!
Last, but most definitely not least, Vesna sent me some amazing homemade vegan cookies, and I was so excited to see that she included the recipe! They were amazing, and I'm not ashamed to admit that I his them from Will. I was not sharing these babies! They were the perfect size to bring to work for a snack or to munch on after dinner.

The way foodie pen pals works is that you receive a package from one person, and send a package to a different person. I sent a package to Katy over at Fit in Heels. Katy is a fitness enthusiast and a mommy to be from Ontario. Her blog has me cracking up every time I read it, she is hilarious! WIAW #4

I forgot today was Wednesday. I was busy taking pictures of my breaky for "tomorrow's post" when i started seeing WIAW pop up in my blog feed. I was thinking everyone had gone crazy and was posting a day early, but nope- apparently I am the crazy one. I was sure it was Tuesday!!
Anywhoo, enough of my crazyness... onto the eats (apologies in advance for the horrible pictures!)






Breakfast- Watermelon and an orange and apple smoothie
Snack # 1- Vegan cookies (from my foodie pen pal Vesna.. more about those on the 30th!)
Lunch- not pictured, but I had a ham and turkey sub from Subway with lettuce, cucumbers and pickles! My favorite Subway sandwich!
Snack #2- Hummus and rice crackers

This week in fitness, I managed to get out for a nice hike yesterday! I had a run scheduled but one of my best friends Ali was in town and we decided a hike would be a nice way to catch up! We decided on Bear Lake. Its not a super long hike, but man it is steep! It took us about an hour each way. Coming back down was worse for sure, we had to try to find branches/trees/bushes to grab a hold of so we didn't fall on our arses!

My half marathon training plan called for some speedwork today.This morning I met my little sister at the track for and we ran 5 400m repeats plus a warm up and a cool down. We were doing the repeats in just under 2 mins which felt pretty good. I was tired by the end though, a day of hiking followed by speedwork the next morning makes for jelly legs for sure! I am planning on a quick 5K tomorrow morning followed by a swim.. only a week and a half until I have to swim 1500m as part of a team triathlon and I don't feel ready at all!!

Awesome Weekend and Week 2 of 1/2 marathon training

Hi!
I hope everyone had a great weekend! Mine was awesome, I got to go camping with some of my family and we had a great time. I took a few pictures, not as many as I would have liked though! Here is a few of my favorites:

I got bored and did a little carving... just kidding, we found it in the woods. Fun fact, I don't have an artistic bone in my body!

We had an awesome time! I ate wayy to much though, I just love camping food! I managed to get a 5km run in on Saturday, but decided against trying a 10K on Sunday. The roads were pretty uneven and I didn't want to chance hurting my foot. I am planning on doing a 10K tomorrow to make up for it- hopefully it'll go smoothly.

In other news, I got my foodie pen pal package from Vesna today!! So exciting, I can wait to post about it! Check back on the 30th to check out what I recieved!

Camping weekend

Hey all!

I am headed out with Will and my parents to meet up with some other family for a weekend of camping and quadding! We go every year and it is a ton of fun. I'm hoping to get lots of pictures to share when I get back.

I am hoping to get a couple of runs in while we are there. I ran 5k on the trails by my house this morning and other than stopping to stretch my foot out a few times, it felt really great! I'm aiming for a 5k on Saturday and a reeeeally slow 10k on Sunday. I'll let y'all know how that goes.

WIAW #3 and 1/2 Marathon Training Day 2

Here's my eats for the day:
Half the Clif bar before workout, the other half and the apple after. The peanut butter pretzel flavor is pretty darn good, but I have to say the chocolate almond is better!

Santa Fe Chicken Breasts-  ate it on iceberg lettuce with 1/2 an avocado

Chicago style popcorn- Carmel popcorn mixed with cheddar popcorn. Sounds disgusting, but it is absolutely addicting!


As for the fitness aspect of it all, today was day 2 of my half marathon training! I am happy to report that my foot feels awesome after my first two runs. On the schedule today was a 30 min tempo run. I pushed it a little, but not too hard as I'm still worried that my foot is going to crap out on me. It feels so good to be running again though!

1/2 Marathon Training Day 1

Hi all!

I did the first run in my 1/2 marathon training today. It was supposed to be 5km, but I ended up doing 4 as I could feel a huge blister coming on (I forgot my socks!)
I took it easy because I didn't want to aggravate my ankle, and it felt really good! I did my 4km in 23:00 which was a good pace (5:45 km).

 Here is what week 1 is supposed to look like:

I am adapting a bit- obviously I only did 4 km today, Wed and Thurs will remain the same, I may shorten/nix Saturdays run- depends how I am feeling, and Sunday is up in the air.I will be adding in strength training for the next 3 days, as well as a couple of swims. All dependent on how my ankle holds up of course! I really really hope its good.

Today strength training consists of two days of livefit combined into one. I'm doing chest/triceps as well as shoulders/back. I am running out of days since we are headed out camping this weekend! I can't wait!

The weekend is still a little ways away, but any awesome plans?

Santa Fe Chicken Foil Packets

Hello All!

I have been using that barbeque to cook dinner for the past 5 or 6 nights. I have a new favorite recipe that I found via Pintrest- Santa Fe Chicken Packets. They are quick, easy and amazingly delicious. The chicken is so moist when it's done, it's unreal! I made a few changes because I couldn't find Rotel- maybe that's a USA thing? Here is how I made them (complete recipe is below photos!)


Ingredients for Bean Mixture

Combine beans, corn, tomatoes and spices. Can be refrigerated and used later.

Extra bean mixture can be eaten like salsa or on a salad- so yummy!

Place chicken breast on foil and cover with 1/4 bean mixture

Fold short edges together to seal, then fold the other edges over twice. Pull up middle so there is room for the steam to move. Note this piece of foil is way too long!!


Grill on Med-High 15-20 mins until chicken is no longer pink inside. (15 usually works perfectly for me!)


Carefully open packet and let steam escape. If not using cheese, enjoy!!
If using cheese, add and close packet up for another minute or so until cheese is melted.


Santa Fe Chicken Foil Packets
adapted from ready, set, eat

Ingredients

4 Chicken Breasts
1- 540 ml (19oz) can black beans, rinsed well
1- 341 ml (12 oz) can corn- drained and rinsed
1- 540 ml (19 oz) can diced stewed tomatoes- drained
1/2 tsp cumin
2 tsp red pepper flakes
1 tbsp taco seaoning
Shredded Mexican Cheese (optional)

Directions:

1. Mix black beans, corn, tomatoes, cumin, red pepper flakes and taco seasoning (if using) together in a bowl.

2.Spray 4 pieces of foil with cooking spray and place a chicken breast on each.

3. Top each chicken breast with 1/4 of bean mixture

4. Fold into packets by bringing the short sides together and folding down twice, then folding the other ends over twice. Make sure there is room for the steam to move.

5. Grill on medium high heat with lid closed for 15-20 minutes until chicken is no longer pink inside. Open packets very carefully as steam will escape.

6. If you are using cheese, open the packet, sprinkle on desired amount of cheese and close packet up again for about 1 minute or until cheese is melted.

Nutritional Information (without cheese):
Per 1/4 of recipe 
311 calories
41g Carbohydrates
3g fat
31g protein 

There are so many variations that can be made to this recipe. Playing around with the types of spices added, the types of tomatoes, using frozen corn instead of canned ect.You could probably add some diced jalapenos if you like it spicy!

There are lots of options for serving these as well. They are great on their own, on top of quinoa, in a wrap or on a salad. My favorite is on a salad with 1/2 an avocado and a little bit of sour cream. The perfect versatile summer bbq food! I had some leftover bean mixture last time I made these, so I used it on a salad for lunch the next day- it was fantastic!

WIAW #2

Snack- Blue Menu Peach Greek Yogurt Smoothie Popsicle

Umm.. where's the veggies? I like WIAW for that reason- I can see what I ate, and what I forgot to eat! Today I will be making more of an effort to get some vegetables in my belly!

As for the workout part, I have finished 3 days of Jamie Eason's Livefit Trainer. Today was legs day, and the workout consisted of:

 15 min Elliptical Warm-up
3 sets of 12 reps of all exercises:
Leg Press
Leg Extensions
Wide Stance Barbell Squat
Seated Leg Curl
Standing Calf Raises
Seated Calf Raises

I also did the hammer curls and standing bicep cable curls that I didn't quite get to yesterday- I got scared away from the weight room by a large gathering of muscle men waiting to use the equipment I was on. I know I should have just finished up, but I was tired and it was a good excuse to leave!

Its been a while since I did a leg workout... in fact I had never even used some of the machines at my new gym before. Some of their equipment was older, and took me a while to figure out.

When I got home from the gym I decided to try my luck at a short 2km walk/run. My foot hasn't bothered me since I got it worked on, so I decided to give it a go... and it was a success! I ran half and walked half and my foot felt awesome! I'm planning on hitting the track tomorrow morning for a slow jog session before livefit day 4, so we'll see how that goes. I still haven't made a decision on whether or not I am going to do the triathlon in Invermere this weekend. I'll probably end up deciding on Friday night.
