Cream cheese chicken chili

I just love Pinterest!

You can follow me here, but I must admit 80% of my boards are food related. And I really like to pin delicious looking desserts that make me hungry!

One of my goals for this year was to try a new dinner recipe each month.

Side note-is recipe really hard to spell for anyone else? I always spell it wrong the first time!

One new recipe I tried was this Cream Cheese Chicken Chili. It was seriously amazing, and so delicious! Just put the ingedients in the crockpot, stir, set it on low for 8 hours and you have a super yummy dinner. I popped Pillsbury biscuits (another word I can't spell- thank goodness for auto correct!) into the oven and they were the perfect accompaniment.

The recipe calls for Rotel, which I think might be an American thing, but you could easily substitute a can of Aylmer's Chili tomatoes, or the ones with peppers in it. I stocked up on Rotel last time we went to Kalispell because of all the yummy looking recipes on Pinterest that call for it.
 
It was so easy to make and so so good!

The only note that I have was that between the Rotel and the chili powder, the chili was quite spicy if you have the taste buds of a wimp (like me). Will likes spicy things and he thought it was perfect, I stirred a little bit of sour cream in to counteract the spice a little and it definitely helped! Next time I think I'll decrease the spice just a little bit.

  1. I love Pinterest for storing and organizing recipes! I'm on the hunt for crock pot recipes too since we bought one last year but still haven't used it yet. Sigh, no Rotel up here but thanks for the tip on using the Aylmers tomatoes. I'll have to give that recipe a try!
