Day one of our eat real food challenge was a success! I actually remembered to take a picture of everything I ate. Woohoo!
Breakfast: Whole Wheat Waffles with Basil Fruit Salad
To make the topping we whipped three egg whites until they got to the consistency we wanted, then whipped in about 1tsp of maple syrup. My uncle makes it with sugar and calls it whip, so we decided to make whip flavored with maple syrup for a healthier option! I thought it was the perfect amount of sweetness, but Will still added more maple syrup to his waffle.
For the fruit salad we just cut up an orange, an apple and a banana and mixed in some fresh basil- it's an unbeatable combo! It's great with fresh strawberries too.
Snack: Orange Raspberry smoothie
Lunch:Turkey sausage,white bean and kale soup (skinnytaste.com)
Dinner: Asian Lettuce Wraps
The picture is not appetizing, but these are amazing. Seriously. Best recipe I've tried in a long time, and it was really easy! How can you beat that?
Whirley pop! Does anyone else have one of these? It makes the best popcorn ever, you don't have to put anything besides salt on it. We usually use 1tbsp olive oil and 1/3 C popcorn kernels for the best taste.
We watched The Girl With The Dragon Tattoo last night, we both really liked it, but Will found it kind of hard to follow since he didn't read the book. Has anyone else watched the movie and not read the book?
Today for me is going to consist of taking Baxter for a walk and trying to clean out my purple room (our spare room that I decided to paint Easter egg purple.. who lets me make these decisions??) . Hope everyone has a great day!
