Meal Plan Mondayand Weekend Recap

The first Monday back to work after spring break... boooo!

Making money is always a good thing though.

But it means my first week of 6am crossfit classes, we'll see how long I can keep that up! I'm trying to become a morning person but I'm really no very good at it. I love sleeping so much!

The last couple of days of spring break flew by! On Saturday I tutored in the morning, then went and pulled my hung over sister out of bed and forced her to come on an hour long walk with me. Her dog enjoyed it, I don't know how much Linds did though!

I went home and did some cleaning and meal planning, then ran to my friend Josh's house (5.75km in 31:00!) for dinner. My brother Jordan and his girlfriend Chelsea and baby Eli were there too, so I got lots of aunty snuggles :) Josh and Jordan made moose burgers- they were probably the best burgers I've ever had in my entire life. So good! My friend Michelle made baked sweet potato fries as a side dish and they were also amazing!

On Sunday morning I slept in until 8:00, it was awesome!! Chelsea and Eli came over and we went for a nice long walk. It's funny/awesome how babies can be wide awake, but put them in the car seat and get it moving and they are out like a light! Maybe this doesn't happen to all babies? I haven't hung out with very many, but the ones that I have hung out with seem to follow this pattern!

In the afternoon I met my friends Jenny and Michelle at our local track and did a couch to 5K workout with them, plus another long walk. They're both getting into running (I hope!!) and it was awesome to workout with them.
My weekend- hanging with Eli, walking the dogs (that's Bruce, my sister's dog), and being soooo excited that the snow is finally melting!! (view from my hallway window on the bottom-how lucky am I?)

The rest of Sunday was spent soaking up the sunshine, relaxing and getting ready for the upcoming week. I teach grade 4 this week, and I'm really excited! I love teaching the intermediate grades- so fun!

On to the Meal Plan:

Monday-Turkey and Artichoke Meatballs (Made these last week and they are seriously amazing!!) Paleomg

Tuesday- Pork and almond stuffing (paleo), with acorn squash (also made this last week and it is so good! I made a couple of batches and froze them for quick dinners!) Recipe is in the Everyday Paleo family cookbook!

Wednesday- Homemade burgers and sweet potato fries- my parents are getting home from their month long Mexican vacay so I'm in charge of making dinner to feed a crowd! They're going to eat clean and they're going to like it!!

Thursday-Leftovers :)

Fri-Sun will be spent at a family reunion in Lethbridge... lots of junk will be consumed so I'm trying to eat as clean as possible this week!

I hope everyone has a fabulous week!!

Three Things Thursday

Todays Three Things Thursday Theme?
Random thoughts!

1. First day of spring yesterday- not so springy around here! I thought the groundhog saw his shadow- what the heck??
My disgusted with winter face. Actually I thought I heard something in the bushes right as I snapped this pic!

2. Crossfit is still kicking my butt. We did back squats on Monday and front squats yesterday (along with many other lovely exercises) and my poor bum is so sore!

3. Baby Eli is getting so big and cute!! He had a photo shoot on Saturday and this one is my favorite! I think he enjoys getting his picture taken just about as much as his dad does :)
Cutest nephew in the world!!

That's all for today, Happy Thursday!!

St Patty's 5km- Race Recap

Race #1 of 13 in 2013 done!!

I am undecided on whether or not I had a good race. The luck of the Irish most definitely wasn't with me leading up to the race, that's for sure!

Issue #1
After my run on Monday, my right hamstring was feeling a wee bit tight. On Tuesday morning, it was burning. I foam rolled, I forced people to rub it, I heated it and it gradually felt a bit better. Still pretty tight when I woke up on race day though!

Issue #2
I'm dumb and did not pack for the Calgary weather. I didn't bring mitts or a warm jacket and that was not smart. The weather sucked on race day, the thermometer in my car read -13, and it was pretty darn windy out. I borrowed some mitts from my friend Ali, but I wish I owuld have layered up a little more than I did!

Issue #3
I went to start my car so it would be warm when we headed to the race. Somehow way back I managed to trip and fell flat on my face. I'm glad the step I landed on was short, otherwise my face would have been a mess. I caught myself kind of awkwardly with my elbows/forearms, which of course led to some shoulder pain. Faaantastic.

Before we left for Calgary I had a PR in my sight. By the time we left Ali's, I was just hoping to be able to finish without having to walk. I was crabby and sore, and my head wasn't in the game at all. I was secretly hoping that one of the girls would suggest not going!

We only had about 5 mins to spare once we got to the race so we headed outside to the start line and got ready to go. Ali, Kirsten and Michelle decided to walk it, so I was on my own. The first km sucked- my feet were frozen, and for some reason a ton of walkers decided that they should start at the front of the pack so I spent the first km dodging said walkers. The first km alone took me 8 min!
Once I got the feeling back in my toes, and I got past all of the slower people I started to relax and have fun. My leg was tight so I decided not to push it too hard, I was just aiming for sub 30:00.

I ended up finishing in 29:27,which I was happy with given the conditions! It was good for 4/51 in my age group, 11/171 women, and 32/227 overall.

I'm looking forward to my next 5k in April, I really want to improve my PR!

Meal Plan Monday

It's been super quiet around here lately!!
I had a great week(ish) off though. I headed to Calgary last weekend for a girls weekend, and it was amazing!!! We spent lots of time shopping, got some walking in, did a 5k race (race recap will be up tomorrow), went out one night, and ate lots and lots of excellent food!

When we arrived on Wednesday we headed out right away for a walk in Nosehill park. It was super nice out, but quite windy!
We went for dinner at Olive Garden (since when did Calgary have an Olive Garden? Best day ever when I found that out!) and headed to the movies to watch Safe Haven afterwards.
In case you can't tell from my picture, the theater was packed... not! For those of you that read the book and watched the movie what did you think of the movie?

Thursday was spent shopping- all day long. I got a sweater and a new tank from Lululemon and some new cardigans from Bluenotes. I didn't find a ton of stuff to buy, which was probably a good thing! When we got back to Ali's place we chilled on the couch and watched movies for the rest of the night. We watched Pitch Perfect (I mediumly enjoyed it) and the Guardian (loved it).

Friday was pretty chill, we did a little more shopping, ate some Yogen Fruz (I tried a dynamite new combo- chocolate and cheesecake.. perfection in a bowl!), and met our friend Michelle for a late dinner at Original Joe's.

Saturday was so. damn. cold!!We headed out to do the race and the thermometer read -12...gross. We got the race done though, check back tomorrow for a recap :)

Saturday night we headed out for St. Pattys. We had dinner at Melrose (food was great, service not so much), then headed to Limericks to meet our friend Heather. The only picture we got from the night is a pretty awful one, but here it is.
Me, Michelle, Ali, Heather, Kirsten

We drove home Sunday afternoon, and the roads once we hit BC were soooo bad! We passed 6 cars in the ditch over 20km at one point. Crazy!! Once we got to Cranbrook, the weather was sunny and there was no snow- I was beyond excited!

Overall an excellent weekend!

And now, on to the meal plan for the week :)

Monday- Turkey Basil Artichoke Meatballs (Paleomg), mushrooms, salad
Tuesday- Roast Chicken, mashed sweet potatoes, mushrooms, salad
Wednesday- Chicken Bacon Sweet Potato Bowls (Paleomg)
Thursday- Butternut squash with pork and pear stuffing
Friday-Cauliflower Crust Pizza
Saturday-Steak
Sunday- Dinner at Will's parents house

Hope everyone has a great week! Check back tomorrow for my race recap if you're interested!

Three Things Thursday

I was looking at old photos on my computer the other day, and those photos inspired today's totally random Three Things Thursday!

1. Mom mom and my auntie used to sew our Halloween costumes every year. No store bought costumes for us! I wish that I knew how to sew, it's on my long list of things to learn to do!
Me, my cousin Kendall, my sister, my brother and my cousin Kirsten

2. I once decided to cut my super long hair off. My mom was devastated and decided that a little bit of long hair was better than no long hair, leaving me with a rather impressive mullet!
Don't act like you're not impressed!

3. We have a had multiple bear issues at our house over the years. This particular time it was a mother and her cub that kept coming around. I was going to sleep one night and I heard a big thunk outside my window. I ran upstairs and told my parents, so my mom went to look outside to see what it was. Long story short- she came running in screaming BEAR!! The conservation officers came up the next day to check things out and set up traps and they found bear slobber all over my window. Apparently I smell delicious :)
I was in a cool kid phase I think.
I hope this was as entertaining for you as it was for me! Happy Thursday!

Spring break rocks!

Yesterday was the first day of spring break, and I definitely took advantage of it and got some stuff done!

The day started with a crossfit workout, we did a super long warm up, followed by...

7 rounds of:

6 shuttle runs
8 wallballs
10 push ups

My time was around 21:00, I'm horrible at remembering to look at the clock when we finish. I'm really loving the crossfit wokouts, and I already feel like I'm getting stronger. I can't wait until I can do all of my pushups from my toes, I'm getting sick of my knees looking like this (excuse the bathtub photo!):

After cross fit I came home and showered and caught up on my blog reading. Then it was time for lunch:

On our way home from Spokane yesterday we stopped for lunch at Cafe Rio in Coeur d'alene. OMG, best salad I've ever eaten in my life!! The whole thing was perfect, and the dressing was sooo good! They gave me my dressing in a to go container, and I didn't use the whole thing (not even close) so I brought it home and used it on my salad yesterday! The salad consisted of romaine, homemade pico de gallo, chicken breast, tortilla strips, and of course the lime-cilantro vinaigrette. So. Dang. Good!

My afternoon was spent organizing our spare room where I pile all of the stuff that I don't want to deal with on a regular basis. That took me a good 3 hours. No pictures of that, I don't like to flaunt my pack-rat status :) I did find some fantastic old pictures, check back on Thursday to see a couple of those gems!

Once I got tired of organizing I decided to get outside for a run. It was a beautiful day out and I'm so glad that I got out to take advantage of it!! I got in 6km, but I had to stop at 5km to take a quick photo:

That's the fastest I've ever run a 5k outside! Pretty excited about that! I ran one more easy km after that for a cool down, bringing my total to 6 km in 33:31. Pretty good if I do say so :)

Workouts for the rest of the week look a little something like this:

Tuesday- Run outside (distance tbd)
Wednesday- Crossfit and dog walk
Thursday-Hot Yoga and dog walk
Friday- dog walk
Saturday- 5km rac (according to the weather office this will not be a fun race!)
Sunday- probably a rest day since we have to drive home. Maybe a walk in the am before we leave.

Pretty awesome week ahead :)

Weekend Recap and Meal Plan Monday

We had such an awesome time in Spokane this weekend!!

We left on Friday and stopped for a little shopping along the way. I got a really cute dress for work at Khols, and a cardi and a t-shirt at Target. We got to our friends place right around dinner time, so we headed out in search of food! We ended up eating at this cute little diner called Maggie's, and I had the best sweet potato fries ever! After dinner we hit up Trader Joe's to get some snacks for the rest of our evening (their kettle corn is dynamite!!)

Saturday was busy, but fun. We took our friends dog for a walk in the park by their apartment in the morning, then headed into town for more shopping. We hit up Costco, The General Store, Dick's Sporting Goods, and Nordstrom Rack.  We took a shopping break halfway through our day to go to Post Falls to meet our friend Jeremy for lunch (he unfortunately had to go to school for part of the day). After Jeremy got home from school we headed over to go for a walk at a different dog park, and stpped to pick up the best pizza in the world on the way home. The rest of the evening was spent just hanging out and playing games.

On Sunday we stopped at Trader Joe's on our way out of town we stopped at Trader Joe's to stock up on our favorites! We had a cooler with us, so we decided to bring home a bag of Orange Chicken to try for dinner- it was seriously unreal! So yummy!! I ate mine on lettuce with steamed broccoli mixed in and a little rice on top!

Today's Meal Plan Monday is a short one.

My friend Kirsten and I are headed to Calgary on Wednesday afternoon to go and spend a few days with our friend Ali. We are planning to do some shopping, hot yoga, and we are all registered to do a St Patty's day 5K on Saturday! I'm really looking forward to it :)

So, here is my 2 day Meal Plan Monday. Will is only home tonight and then gone for work for a week, so I decided on quick and easy so we wouldn't have a bunch of leftovers sitting around going bad!

Monday- Clean eating chicken stir fry (from the eat clean diet cookbook)
Tuesday- Cafe Rio Style Salad (with the leftover dressing that I took home!!)

Here's a little running reminder for Monday, I've definitely been feeling this way sometimes lately:

Hope everyone has a great week!

First taste of Crossfit

So I tried crossfit last night for the first time... and I actually really liked it! And I have a blister already which makes me feel really hardcore :)
Since it was our first time the trainer gave us a tababta warm up on the rower, and then set us up with a little circuit to see how our strength base was.

Short story- My strength base stinks!!!

I'm looking forward to increasing it though, I signed up to go 3X/week for a month, and then I will evaluate where I want to go from there. It's a spendy little workout, but I'm hoping it'll be worth it! My next session is Monday morning :)

I have a couple of runs planned for this weekend, a 10K and a 5K. I'm also planning on doing a workout video of some sort tomorrow, and practicing my squat form (because apparently mine stinks!). Maybe a swim one day to if I feel like getting my butt to the pool.

I hope everyone has a super weekend! Here is a new picture of my cutest little nephew for you :)
I just love him!!

For all you crossfitters out there, how long did it take before you noticed a gain in strength?
Any suggestions for a great workout video? I have the 30 day shred and ripped in 30, but I'd like to try something new!
