Meal Plan Mondayand Weekend Recap

The first Monday back to work after spring break... boooo!

Making money is always a good thing though.

But it means my first week of 6am crossfit classes, we'll see how long I can keep that up! I'm trying to become a morning person but I'm really no very good at it. I love sleeping so much!

The last couple of days of spring break flew by! On Saturday I tutored in the morning, then went and pulled my hung over sister out of bed and forced her to come on an hour long walk with me. Her dog enjoyed it, I don't know how much Linds did though!

 I went home and did some cleaning and meal planning, then ran to my friend Josh's house (5.75km in 31:00!) for dinner. My brother Jordan and his girlfriend Chelsea and baby Eli were there too, so I got lots of aunty snuggles :) Josh and Jordan made moose burgers- they were probably the best burgers I've ever had in my entire life. So good! My friend Michelle made baked sweet potato fries as a side dish and they were also amazing!

On Sunday morning I slept in until 8:00, it was awesome!! Chelsea and Eli came over and we went for a nice long walk. It's funny/awesome how babies can be wide awake, but put them in the car seat and get it moving and they are out like a light! Maybe this doesn't happen to all babies? I haven't hung out with very many, but the ones that I have hung out with seem to follow this pattern!

In the afternoon I met my friends Jenny and Michelle at our local track and did a couch to 5K workout with them, plus another long walk. They're both getting into running (I hope!!) and it was awesome to workout with them.
My weekend- hanging with Eli, walking the dogs (that's Bruce, my sister's dog), and being soooo excited that the snow is finally melting!! (view from my hallway window on the bottom-how lucky am I?)

The rest of Sunday was spent soaking up the sunshine, relaxing and getting ready for the upcoming week. I teach grade 4 this week, and I'm really excited! I love teaching the intermediate grades- so fun!

On to the Meal Plan:

Monday-Turkey and Artichoke Meatballs (Made these last week and they are seriously amazing!!) Paleomg

Tuesday- Pork and almond stuffing (paleo), with acorn squash (also made this last week and it is so good! I made a couple of batches and froze them for quick dinners!) Recipe is in the Everyday Paleo family cookbook!

Wednesday- Homemade burgers and sweet potato fries- my parents are getting home from their month long Mexican vacay so I'm in charge of making dinner to feed a crowd! They're going to eat clean and they're going to like it!!

Thursday-Leftovers :)

Fri-Sun will be spent at a family reunion in Lethbridge... lots of junk will be consumed so I'm trying to eat as clean as possible this week!

  1. It's funny how different all the spring breaks are. Here public school is this week and Catholic school is next week. Sadly I don't get either week off!

    Little Eli is so sweet! At that age Audrey used to pass out in the carseat and stroller. Now there are too many interesting things to look at. I miss those days!

    I seriously need to make those turkey and artichoke meatballs! Sound so good!

    1. I have been making batches of those meatballs to freeze to take for lunched, but so far they haven't made it to the freezer.. so dang good!!
