Three Things Thursday


1. I signed up to do Run to the Finish's 28 day Clean and Lean Challenge. this should be interesting!

2. I'm in a workout slump. Someone PLEASE give me a kick in the too tight pants!

3. My friends are awesome! I seriously have the best friends in the entire world. We got together last Sunday since my friends from Spokane and my friend from Calgary were home. That almost never happens at the same time! we had an awesome time, lots of good laughs were had.

I have been friends with Ali since we were 5, Kirsten since grade 3, Paige since grade 6, Michelle since grade 8 and Jenny since grade 12! That either means I'm really good at keeping old friends, or really bad at making new ones.... I'm not sure which!

Workout Wednesday

As I mentioned yesterday, every Wednesday I get together with 3 girlfriends and do a workout. We take turns planning the workout, and this week is my week! I decided a little tabata action was just what we needed this week.


Tabata has been my favorite kind of workout lately, it's a quick and effective way to gets some awesome cardio and strength benefits! For those of you who have an iPhone, I love using the gymboss timer app for tabatas, that way you don't have to watch the clock the whole time :) I decided to mix it up with arms, legs and core this week. I'm planning on posting another Tabata workout next week, so stay tuned for that!

Anyone else love tabata workouts?

Training Tuesday

My workouts from last week... a little more sparse than I would have liked!

Monday May 6-Rest day
Tuesday May 7- BBB Tabata work out, HIIT Intervals on the Tredmill
Wednesday May 6- AM-Crossfit tabata workout, PM Circuit workout
Thursday May 7-Walk 3km
Friday May 8-Crossfit- the longest crossfit workout I have ever done, I was sore for 2 days!
Saturday May 9- Day off (I try to have a rest day the day after I get a massage)
Sunday May 10- Off... I was being lazy :)

Wednesday evenings are quickly becoming one of my favorite nights of the week. I have been getting together with my friends Michelle, Kirsten and Jenny up at the college track, and we take turns planning a workout each week. It's a great way to get together and catch up! We used to get together and have coffee, but I'm liking the workout thing much better! This week is my week to plan, and I'll be posting the workout tomorrow.

This week my goal is to get in 2 days of crossfit, 4 runs, 2 bike rides and 2 swims. Wasa is coming up quickly, and I am definitely doing it for fun this year, not a PR! I should try to get in a couple of open water swims before then...brrrrrrr!

Long Run Playlist

Happy Friday!!! It's always especially happy before a long weekend!

Today is long run day, so I decided to download some music for a new playlist!


My long run playlists are usually quite different from my shorter run playlists. On the shorter ones, I make sure that all of the songs have a nice quick beat to keep my legs moving faster- most of the time country music does not make an appearence!!
For long runs I include a little bit of everything, and I don't really care if the beat isn't as fast since I'm trying to slow myself down- something I'm working on!!

On this playlist we have some new, and some old (some really old- Scar Tissue and Meet Virginia were both released in 1999, and Inside Out in 1998!). Sometimes random songs pop into my head out of nowhere and I feel the need to download them- that was the case with those 3 songs.

Training Tuesday/Run Streak Update #4

Sadly, my running streak ended at 24 days. I don't even have a good reason for it ending, I just totally forgot to run on Friday! I don't know how it slipped my mind but it did, until I was lying in bed at 11:00 and suddenly sat up, woke Will up and announced that I forgot to run. I followed this with a 2 minute debate on whether I should get up and just do a quick mile on the tredmill, or go back to sleep and rest up for the race the next morning.

Sleep won.

I'm ok with it though, I doubled my days from my last run streak, and I've gotten back into a running groove (yes!!). I will attempt 50 days again, but not right away. Here is my final run streak recap:

Fun run for ALS- Race Recap!

On Saturday I ran my 3rd race of 13 in 2013! It was a local 5/10K to support the ALS Society of Canada. I decided to do the 5K as I have been working on getting faster lately as opposed to training for distance (although that's about to change with my 20K coming up in a month and a half!)

The race went so well!! Last year my time in this race was 28:36, this year my time was 26:44! A PR by almost 2 mins! I almost couldn't believe it when we came around the last bend of the track and saw the clock. I came 2nd in my age group, 11th overall and was the 5th woman.

I wouldn't have been able to finish that quickly if it weren't for my momma. She ran with me and paced me, and wouldn't let me slow down even when I thought I was going to die. This is probably the crappiest 5K course ever created. The hills are long, you start on a downhill and end on an uphill. We started off with a quick pace, our first km was done in under 5 mins since it was mostly downhill. KM 2-3 is pretty much a steady climb, with the turnaround at the top of the hill. Going down I felt worse than going up, my stomach was absolutely killing me! I made some not so great dinner choices the night before (pizza anyone??) More than one time I told my mom I couldn't do it, but she made me keep going and focus on something different.

By the time we were at the bottom of the last hill was feeling way better and ready to get it done! The race ends on the track, and we picked it up for the last 400 M. As we came around the corner towards the finish line I could only see the seconds. it was at XX:36, and i was sure the minutes must be at 27. When I saw 26 as we crossed the finish line I was so excited! I beat my goal time by over a minute, and beat my PR!

I feel like crossfit has really been helping me with my running! I have been running lots, but I think that the strength training is really helping me to step up my game. My first race was a couple of weeks after starting crossfit, my time was 29:27. The second one was 28:21, a month and a half after starting crossfit. Now this one, 26:44 about 2 and a half months after starting crossfit, my fastest race ever (and probably the hardest course out of all three!) I love it and definitely recommend it if you are looking to increase your speed

Mother's Day Brunch

My favorite meal?

Definitely brunch.

Not only because brunch food is super delicious, but also because generally if we are having brunch, its with some super awesome people!

Today we had Will's parents, my mom and dad, my gramma, my sister and her boyfriend, and my brother, his girlfriend, and baby Eli over. It was Chelsea's first mother's day!

On the menu:

Grain free banana bread (Healthful Pursuit)
Mini German Pancakes (Real Mom Kitchen)
Bacon 
Fruit Salad
Egg Casserole
German pancakes baking



For the egg casserole I just covered the bottom of a 9X13 pan with frozen shredded hashbrowns,topped it with a layer of cooked crumbled breakfast sausage, and then poured a mixture of 12 eggs, milk and shredded cheddar cheese on top. I made it on Saturday night and then baked it on Sunday at350 for 40 mins. It was delish!!
I was kind of putting a few recipes together, most of the eggy breakfast casseroles that I found called for bread of some sort; Will's mom has Celiac Disease, so we had to make sure that we had some gluten free recipes!

After breakfast we went for a walk with the dogs over to the creek and the pond. Then the boys headed to the shop to do some tinkering, and to play with Will's homemade potato cannon. It kept them entertained for quite a while!

New Years Resoulutions Update #4

This post is more than a few days late, but here it is!

1. Run 13 races in 2013

Race #2 was completed- New PR!!! I did a post on that race here. I have one more race this month and then 2 coming up in June! Check out my 2013 races tab to see the rest of the races I am planning on participating in this year.
2. Try out crossfit

Starting my third month and I'm still in love! I am definitely noticing more definition in my arms and legs, and I'm sure it played a part in helping me PR my last race!

3. Be able to do 50 pushups in a row

Stupid pushups. I am up to about 6 real pushups now that I've learned how to do them properly. I'll keep trying, but I have a feeling 50 is a long shot!

4. Try 1 new dinner recipe per month

I forgot to keep track, I know we tried a few, but I cant remember how many exactly. Here are a couple of links to the ones I remember:

Curried Yam soup - So yummy! I froze a bunch and I am eating some for lunch today!

5. Read 52 books this year
Whoops! I read a grand total of 0 books last month. With the weather being so gorgeous right now, I planning on more than making up for that this month!!

Chicken foil packages: a recipe re-do!

Howdy! Welcome to What I ate Wednesday #14! I haven't linked up to WIAW for quite a while, I'm hoping to get back to it on a regular basis :) As always, Thanks to Jenn at Peas and Crayons for hosting the link-up!

Here are my eats from Monday:

Breakfast: Lately I've been switching between green smoothies and oatmeal- trying to make that transtion between winter breakfasts and summer breakfasts I guess!

Mondays breakfast was oatmeal with cut up peaches, slivered almonds, and cinnamon. Delish!
I always cook my oatmeal on the stove and whisk in an egg just before it finishes cooking for extra protien!

Lunch:
Lunches have been really boring lately- chicken salad with either apples or oranges on it, and some slivered almonds. I scarffed it too fast on Monday to remember to take a picture!

 ....,and my favorite summer BBQ staple- Mexican Chicken Foil Packets. Recipe is below!!
Mexican Chicken Foil Packets

I posted the recipe for the foil packets last year, but I've switched it up a little since then!

Mexican Chicken Foil Packets

Ingredients:

4 chicken breasts
1 can corn,
1 can black beans
1 can Rotel (Can sub 1 tin diced tomatoes, 1 small drained tin of green chilies, and 1/2 tsp cumin. I like to use the Alymer Red Pepper stewed tomatoes)
Optional- Shredded  Cheese (I like Monterrey Jack!)

Directions:

1. Mix corn, black beans and Rotel (or stewed tomato mixture) together in a bowl. Make sure beans and corn have been drained and rinsed.

2. Spray 4 pieces of foil with cooking spray and place a chicken breast on each.

4. Fold into packets by bringing the short sides together and folding down twice, then folding the other ends over twice. Make sure there is room for the steam to move.

5. Grill on medium high heat with lid closed for 15-20 minutes until chicken is no longer pink inside. Open packets very carefully as steam will escape.

6. If you are using cheese, open the packet, sprinkle on desired amount of cheese and close packet up again for about 1 minute or until cheese is melted.


7. Enjoy!

If you're going to try a new BBQ recipe this summer, make it this one! It's so versatile! I like mine cut up on a salad with a little sour cream, Will likes his on rice. We've had them in wraps before, or just on their own. So delicious and easy!

I'm pretty happy with my mileage this week. There were a few days (oh fiiine.... 4 out of 7) where I just did a mile because of soreness and/or lazyness, but I'm ok with it! My goal this week is to do at least 2 miles each day, providing my body is ok with it :)

Weekend Recap and Meal Plan Monday

 This weekend was a busy one, but it was amazing! The weather was gorgeous, so we spent a whole lot of time outside!

Friday: We spent Friday working on the yard, getting our patio furniture out ect. We had some friends over for a weenie roast in the evening and spent a few hours sitting around the fire- my all time favorite summer activity!!

Saturday: I went to yoga on Saturday morning, followed by a 10K run on my favorite trail. The picture for the header of my blog was taken from that trail.. see why it's my favorite? When I got home I helped Will and his friend Jared with the yard for a while and then spent some time sitting and reading in the sun (which reminds me.....I need to do my goal recap for April still!).

Sunday: Most of Sunday was spent in the yard picking rocks. So fun. Not. Our "yard" is basically a big pile of dirt and rocks, so it is going to take a lot of work before it resembles anything remotely like a real yard. We got it to the point where the grass seed is planted, so we'll see how it turns out!

Oh yes, we had to pick allllll of those rocks.
Sunday night we celebrated Cinco de Mayo by eating Mexican Food and drinking margaritas. I made a burrito bar! We threw salsa, 4 chicken breasts and black beans in the slow cooker on high for 4 hours, the shredded the chicken breast to make the main filling. We also had brown rice, homemade guac, more salsa and cheese for toppings. Best dinner I've had in a long time, and lots of leftovers for delicious lunch salads!

On to the meal plan! This week is officially BBQ week at our house- Check out our weather forecast for the week:

Saturday Long Run

*This was supposed to post on Saturday and it didn't! So you get two posts from me today! C'est la vie!

Today was the most gorgeous day for a run! I went to yoga this morning and decided to do my run afterwards. It was a hot one! It was 17 degrees when I headed out and not a cloud in the sky. I'm so used to timing my runs to be later in the day so they're a little warmer, I'm going to have to get back in the habit of getting them in earlier I guess (no complaints here!!)

I ran 10Km in 57:20. I stopped twice for about 30 seconds each time to take a quick shade break! I ran almost exactly at noon, so the shady patches in the trail were few and far between.

I seem to have a problem with running my long runs (specifically 10K) at a slow for me pace. I feel like every time I go out I need to beat my best time. Today was no exception. I started out telling myself to chill, but when I looked down at my garmin at 2km I was making pretty good time, so I decided to push it. I ended up with a great time (my fastest 10k ever!), but I really need to learn how to slow it down and not be so competitive with myself.
