Paleo Challenge

Finally, a paleo challenge update!

I'm 17 days in, and so far, so good! I feel great, my skin is totally clearing up, and believe it or not I can already see the difference physically. I took before pictures, and on Friday I took midway pictures- huge difference already. I wasn't expecting it to be that dramatic. I'm debating whether to post the pictures, maybe I'll post the before and after at the end :) I am down on the scale, almost 5lbs! I wasn't planning on weighing myself too much throughout, but I can't resist sneaking a peak every now and then.

I was worried about lack of carbs for running, but it hasn't made a diference for me. In fact I ran a mile the other day in 7:40 without pushing too hard, and that is really quick for me. I'm planning on starting to run more this week, so we'll see how that goes.

While we were camping this wekend, I kept saying to Paige "I can't eat this, or I can't eat that". She told me instead of saying that I can't eat something, try saying "it is not in line with my goals to eat that right now".  Interesting little mind trick!

What am I missing about non paleo food?

Suprisingly candy is not at the top of my list. The following is what I am missing most, in order of how much I miss them:

1. Sauces.
Definitely what I miss the most. I miss ketchup, BBQ sauce, and hot sauce. I know there are paleo recipes out there, but I just know they won't be the same. I am going to attempt a ketchup recipe that I found yesterday, so wish me luck on that one! I'm also missing having a variety of salad dressings. I made a really good raspberry vinaigrette but that's the only kind I'm eating right now so that it all gets used before it goes bad.

2. Bready things.
I am a self confessed carbaholic. Bagels, bread, buns- anything that starts with a B and is made of carbs, I miss. While we were camping on the weekend everyone made these delicious looking breakfast sandwiches on everything bagels- that has been my biggest test to date!I didn't cave though- I made some delicious paleo pancakes and ate them with almond butter instead!

3. Peanut butter.
One of my favorite foods in the whole world. I get super jealous when Will makes himself a peanut butter sandwich!

4. Yogurt.
Plain greek yogurt + PB + Apple = my very favorite snack in the world. Definitely going to be my breakfast on July 1st!

5. Candy.
I do love me some candy. I find I don't miss it until I see other people having it though. This weekend we went down to the states and went camping and I found myself craving it mostly because other people had it.

I'm missing these things, but not as much as I thought I would. I'm developing better eating habits through the challenge, and I feel like I'm never deprived. Tomorrow for What I Ate Wednesday I'll be sharing a typical day of eats lately with you, so stay tuned for that :)

  1. Those meals look delicious! You make paleo seem doable but I would really miss my yogurt, cream in my coffee and the occasional carb.

    Are you finding you are full? That's my biggest problem- I don't think I eat enough food.

    1. Oh man, I miss cream in my iced coffee!! I forgot to add that one to mylist!
      I'm finding that I am eating way bigger meals, and staying full longer. It was weird eating such big portions at first but I'm getting used to it. I've totally eliminated eating after dinner because my dinners have been so big that I'm full until I go to bed! I snack a little bit, but not nearly as much as I used to. I'm hoping to carry some of these habits forward once the challenge is over, but there are definitely certain things I'll be adding back in (hello coffee cream!)
