WIAW- Paleo Edition

Welcome to What I Ate Wednesday!

Thanks as always to Jenn for hostessing :)

Today I'm going to show you some of the delicious paleo eats I've been enjoying lately! As I mentioned in yesterday's post, I am now 18 days into a 30 day challenge. I am still debating whether or not to post my progress pics- I am seeing amazing results so far!! I showed the pictures to a friend (who swore she'd never eat paleo) yesterday and she couldn't believe the photos were only 12 days apart.Today she started eating paleo too!

Onto the eats:

Breakfast was 3 ingredient coconut pancakes. I found a few recipes that looked good, so I put them together and came up with this one. Mix 1 mashed banana with 2 eggs and about 1/4-1/2 cup coconut. I also added lots of cinnamon, so I guess technically they are 4 ingredient pancakes! Post photo they were topped with almond butter. I ate my pancakes with homemade pork sausage and watermelon. Super yummy breakfast!

Lunch was a delicious mess! I sauteed some lean ground turkey in coconut oil with onions and garlic. Once the meat was cooked, I added half a bag of broccoli slaw (my new favorite veggie mix!), salt and pepper, and sauteed it for another minute. I added about 8 oz of the mixture to half a baked sweet potato. I  had baby carrots on the side. It made for a very filling lunch!

Dinner was chicken (that we raised ourselves), mashed sweet potatoes with pecans, and a spinach salad with olive oil and balsamic vinegar. I didn't used to be a fan of oil and vinegar, but it actually tasted pretty darn good!

I had a couple of snacks, first I had a  coconut milk and pineapple smoothie- heaven in a cup!! I used about 1 cup of frozen pineapple and 1/2 a cup of coconut milk. So yummy.
 I love almonds, and I found an awesome recipe for maple cinnamon almonds that really helps to curb sweet cravings! I mixed a tin of almonds with 1/4 cup coconut, 2 tbsp maple syrup, 1/2 tbsp cinnamon, 1 tsp olive oil and 1 tsp sea salt together, spread on a baking sheet covered in parchment paper and baked for 30 minutes at 250 degrees. A couple of these babies and the sweet craving is satisfied!

I've ben eating lots of fruit lately, it's all so good right now! Cherries, grapes, plums, nectarines. mmmmm! Today's fruit of choice was an apple. Who doesn't love a crispy delicious apple!

  1. Yum! With the meals that you eat, paleo doesn't seem that bad! Every meal had me drooling.

    I'm going to try making those almonds. I have some almonds at home that are just waiting to be used up.

    1. The almonds are so addicting! I had to portion them into baggies so I didn't eat the entire container at once!

  2. An apple a day does keep the doctor away :)
