What I Ate Wednesday #20- Paleo(ish) eats!

I am still trying to eat mostly Paleo right now. I had a few major fails on the weekend, but I am feeling back on track now!

Here is a look at what I ate yesterday...

Breakfast- paleo pancakes, turkey sausage, raspberries. We have an awesome butcher in town who make a variety of sausages that are gluten free and made with organic spices!
Lunch- Turkey sausage, broccoli, and onions sauteed in coconut oil
Dinner- Roast chicken (we raised and butchered the chickens ourselves), roasted broccoli with garlic and roasted carrots

Quest bar- this was my non paleo indulgence. I have heard lots about Quest bars and wanted t otry them. I tried the cherry cheesecake flavor and it did not disappoint!
Pistachios- I find I only need a few of these to fill me up. So yummy!
Cinnamon maple almonds- recipe here! I usually snack on a handful of these while I make dinner.
Dried Mango- I found this sugar/sulfate free at an organic store in  Eureka Montana. I don't eat dried fruit very often, but these are good for a quick snack in the car.

I need to incorporate more fruits and veggies into my snacks. I was on the go and away from home all day and hadn't planned to be, so pre-packaged snacks it was!

That is What I Ate Wednesday :) Check out Peas and Crayons for more WIAW inspiration!

What I Ate Wednesday #19- Paleo Eats

Last time I participated in a What I Ate Wednesday was in July... Whoops! As always, check out Peas and Crayons for more WIAW inspiration!

Today is a paleo version of WIAW. I decided to start eating paleo again a week and a half ago and I'm already feeling way better!

On to the eats:

The best thing to wake up to- Iced coffee with coconut milk. I prefer iced coffee to hot coffee any day! I recently tried swapping out cream for lite coconut milk, and low and behold I have a new favorite!
We got about 8 feet of new snow last night. That may be a slight exaggeration.

Breakfast: Paleo pancakes with almond butter and fruit salad

Paleo Pancake recipe:

2 eggs
1/4 C shredded unsweetened coconut
1/2 mashed banana
1/4 tsp vanilla
cinnamon to taste (I like LOTS!)

Combine and fry over medium heat in coconut oil. I always top mine with almond butter, but you could use maple syrup or fruit puree. The recipe is very versatile, if you like a thicker pancake you could add some coconut flour. Not a banana fan? Omit it and up the unsweetened coconut (they won't be very sweet though). I have tried many variations on the basic recipe and I haven't been disappointed yet.. aside from the time I burnt a batch!

The green flecks in my fruit salad? Basil. I always add fresh basil to my basic fruit salad (apples, oranges, and bananas). Try it, you'll love it!

Mexican style salad with fresh pico, guacamole and chicken.

Dinner: Homemade burgers with bacon, mushrooms, avocado and paleo ketchup- my very favorite quick dinner! We had a side of roasted broccoli as well :)

Dessert was a paleo peppermint patty- I ate the last one before I remembered to take a picture. They were absolutely amazing... recipe here!

Weekend recap

Happy Family Day to the Canadian provinces that celebrate! For some reason BC decided that our Family Day should be the weekend before everyone else, so no Monday off here this week!

We had a very low key weekend, I wasn't feeling great on Friday so I didn't go to work. Will and I aren't usually big Valentines day people, but I decided to make a little man basket for him this year, just for fun!

It went over well :)

We had planned on making dinner together, but since I wasn't feeling awesome we decided to wait and make it on Saturday night! It was an early night for me- I was in bed by 8:00!

Saturday was much the same- I did a lot of this:

The Olympics take over my life when they are on, I absolutely love them! I don't think there is a psort that I don't like to watch. It frustrates me that everything is on so early/when I'm at work. I tried to convince Will that we needed a PVR but that didn't fly unfortunately.

Saturday night we had our Valentines dinner- it was ammmmazing!
Steak, broccoli, mushrooms- does it get any more delish? I am trying to eat 90% Paleo right now, and so far it's going really well!

I still wasn't feeling awesome so it was bed at 8:00 for me again.

Sunday morning we had Will's dad, my brother, his girlfriend, and my nephew over for brunch and hockey game watching. The hockey is definitely my favorite part to watch- so exciting!!

Will had to go to work for the afternoon, so mine was spent watching some replays of the morning's events! Snowboard cross = one of my new favorites!

My friend Michelle stopped by on Sunday afternoon so I could try one of her paleo cupcakes that she made, and oh my goodness- so freaking good! It made my afternoon :)

I started feeling worse Sunday evening so it was off to bed with no supper for me. I have a really busy week coming up so I am hoping that this cold is over quickly!

I hope everyone had a great weekend!

Tell me your favorite Olympic sport to watch and why- I really want to know!
